Ireland, a country famous for its countryside, writers and poets and of course our love of the drink. How apt it is then that the country's first ‘green' boozer has opened opens its doors.
Nearly everything you see inside ‘Shebeen Chic’ has been recycled from old buildings or taken from auctions, down to the 1940s corrugated-iron bar frontage. “We’ve gone down the line of reduce, re-use, recycle. We have made the place from what people have thrown away” says owner Stephen McCusker,
“The ethic is we are going back to the time when we didn’t have as much money as we have now. We make do with what we have and we are a bit smarter with our money.” McCusker, has spent next to nothing compared to what would normally be spent to fit out a new pub; some of his furniture was bought for as little as 50 cents.
Billed as a gastro-pub, Shebeen Chic is offering traditional Irish fare cooked by Paris-trained chef Seamus O’Connell, who studied under Michelin Star chef Kevin Thornton. Mr McCusker is hoping to also bring in the swap shop fad, which has become so popluar in the Big Apple in recent times which involves customers bringing in bags of clothes on particular days and bartering with others in the pub. People will also be able to exchange chairs, tables, and other goods.
